This was an unknown item to me until about 6 months ago. You can find it in the grocery store near the other squash and eggplant. Just look for a squash that looks healthy - no weird spots on it. I have not had a "bad one" yet. As far as how to eat this, in the past I have used Lobster Bisque Soup from Trader Joe's or just regular homemade spaghetti sauce. DO NOT ASSUME THIS IS A SUBSTITUTE FOR NOODLES. You will be very disappointed if that's what you expect! I really have enjoyed the taste, but I know that there are many people who try to sub it out for the carby noodles and just can't make their minds wrap around it. It is crunchy/fibrous, and sweet. I hope you get a chance to enjoy this awesome vegetable!
Quick and dirty: Spaghetti Squash
Where do I get it? Food Lion - $.99/lb
Prep Time: 45-60 minutes
Oven Temp: 350 degrees (convention/convection, doesn't matter in this case)
Directions:
1. Poke deep vent holes with a knife.
2. Place squash in a dish with about an inch of water.
3. Cook - it's "done" when the shell is a little squishy. I have yet to overcook this.
4. Cut that sucker open and scoop out the seeds and gooey inner parts
5. Scrape out all the rest of the flesh and use in whatever manner you want - either put veggies over it or stir sauce into it!
This is the Spaghetti Squash with spaghetti sauce all stirred in! So far this has been my favorite repeatable way to eat it!
